HOME: SPRING IN YOSEMITE NATIONAL PARK APRIL 2010

 Upper Yosemite Falls

Despite seven inches of snow last week and more predicted next, spring has arrived in Yosemite Valley as evinced by waterfalls and blooming Western Redbud.  A string of sunny days has caused all the ephemeral waterfalls to make their annual appearance and boosted the permanent falls to gushing status.

Western Redbud in full bloomCar alarms signal the start of the tourist season in Yosemite Valley, and the tourists are here in droves this holiday week to view the waterfalls at full force and the Merced River raging down it's course through the Valley.  Though the trails are still muddy, the bike paths are clear, and there is nothing finer than tooling around the Valley on a sunny spring day with cascading water as the backdrop.  The ephemeral falls often don't have official names because of their transient nature, but some do, such as Staircase Falls below Glacier Point and the Royal Arches Cascades.

After a day of waterfall viewing, we opted for dinner with a tropical theme.  We spent our 2005 honeymoon camping on the beach in Baja California, where fishermen from the Pacific side of the peninsula will hand deliver camarones to the Sea of Cortez beach campers.  Inspired by this bounty, I rustled up Shrimp Veracruz based on available ingredients at our campsite and have been cooking it at home per my husband's request ever since.  Below you'll find my recipe for Pseudo Shrimp Veracruzano.

Pseudo Shrimp Veracruzano

To serve 4 people:

1 lb. uncooked peeled shrimp 

Tablespoon of crushed garlic

1 large white onion

5 large ripe tomatoes

6 Anaheim chile peppers

capers

olive oil and red wine vinegar

sea salt and ground pepper

2 cups cooked white rice

Fresh cilantro

Limes 

Saute onion cut into quarters, garlic and peppers sliced into 1 inch thick rings in olive oil in a large pan over medium heat until softened (10 minutes). Add capers.  Add tomatoes cut into wedges and cook over medium heat for 20 minutes. Add red wine vinegar, salt and pepper during the course of cooking to create a sauce as the tomatoes break down.  If you do not have good ripe tomatoes, substitute a container of cherry or grape tomatoes (sun-dried tomatoes with added tomato paste will create a sauce during the winter when good tomatoes are unavailable).  You may add tomato paste to fresh tomatoes if you like more sauce.  When the sauce is cooked, add the shrimp and cook for 5 more minutes until the shrimp are cooked through, turning an opaque pink color.  Serve over cooked white rice, garnish with chopped cilantro and lime wedges.
